Westminster Cheddar Burgers


500g minced steak
1 small onion, finely diced
4g salt
3g freshly ground black pepper
75g Westminster Cheddar, broken into cubes
2tbsp sunflower oil
4 burger buns
2 tomatoes, sliced
1 small red onion, sliced
1 Little Gem lettuce
2tbsp tomato relish


Put the mince, onion, seasoning and cheese into a bowl. Mix together well and form into 4 burgers. Allow the burgers to cool and set in the fridge for at least 30 minutes.
Heat 2tbsp of sunflower oil in  a frying pan and fry the burgers for 4 minutes on each site until cooked through. Alternatively, cook on the barbecue.
Arrange the tomato, lettuce leaves and onion on a bun and place a burger on top.
Spoon over a little tomato relish and top with the other half of the bun.
Makes 4 cheese burgers.
